Description
Hands-on instruction in the basics of production cake decorating with attention given to the techniques of icing cakes. Cake decorating areas include script, borders, basic flowers, and seasonal decorating. Students practice icing cakes and decorating;  emphasis is placed on accuracy and speed to simulate industry standards.

  1. Ice layer and sheet cakes with icing
    Assessment Strategies
    In the icing of three layer and three sheet cakes with various icings
    Using spatulas and a turntable
    Criteria
    cake layers are filled and assembled so cake is level
    icing is applied smoothly and evenly to cake layers and sheet cakes
    you follow safety and sanitation procedures

  2. Pipe basic script and various borders
    Assessment Strategies
    In the decorating of one layer and two sheet cakes with a script, borders and floral spray
    Using pastry bags, turntable, and decorating tips
    Criteria
    cake is decorated with a legible and evenly spaced script
    cake script is positioned on the cake proportional to the flowers and border
    cake is edged with various borders evenly piped
    cake borders are proportional to the size of the cake
    you follow safety and sanitation procedures

  3. Shape nail and drop flowers
    Assessment Strategies
    in the decorating of three layer and three sheet cakes with a floral spray consisting of roses and drop flowers
    using pastry bags and decorating tips
    Criteria
    cake is decorated with icing roses made on a flower nail
    cake icing roses are positioned on the cake in a graceful floral spray
    cake is decorated with flowers made with a drop flower tip
    cake flowers are positioned on the cake in a graceful floral spray

  4. Trace and air brush cake designs using the kopy kake technique
    Assessment Strategies
    In the make-up of three sheet cakes with kopy kake designs
    Using kopy cake machine and airbrush
    Criteria
    kopy kake designs are traced onto cake tops with a thin line of piping gel
    kopy kake designs are air brushed using appropriate colors for the design.
