Course Information
Description
The lab is used as a simulated bakery in this course with products being merchandised through the bakery store. Students make items with an emphasis on production speed to help understand the flow of a real bakery. Students are responsible for service case presentation as well as effective merchandising displays and customer service.

Course Competencies
  1. Perform tasks of bakery owner
    Assessment Strategies
    Written product - two bakery specials/promotions with instructor's approval
    Written and/or digital signs stating the specials
    Skill demonstration - cost out of ingredients for each promotion using wholesale prices
    Criteria
    create two bakery specials/promotions that meet instructor specifications
    secure and place an ad in the Clarion newspaper
    10 signs for bakery specials/promotions meet instructor specifications and approval
    post 10 signs in designated areas at the college during the week of the specials
    cost out of ingredients used in making bakery specials/promotions is accurate
    determine prices for bakery specials

  2. Perform tasks of bakery production manager
    Assessment Strategies
    Written product - the order of ingredients necessary to produce the specials
    Written product - a production schedule to complete products within the class time
    Written product - a work schedule to complete products within the class time
    Criteria
    ingredients ordered for the special/promotion are complete and accurate
    assign fellow students to produce specials
    finish each special within the class time
    communicate and coordinate production with front end manager
    follow standard safety and sanitation procedures
    follow standardized recipes

  3. Perform tasks of baker
    Assessment Strategies
    Skill demonstration - in lab using commercial baking equipment
    Criteria
    implement production schedule set by bakery manager
    produce bakery specials within the class time
    follow standard safety and sanitation procedures
    follow standardized recipes
    products are completed on time, as assigned by the production manager

  4. Perform tasks of bakery front end manager
    Assessment Strategies
    Skill demonstration - in lab or college bakery retail space
    Criteria
    communicate and coordinate with bakery manager about specials/promotions
    bakery products are packaged and displayed attractively in service cases
    supervise front end clerks and assist or intervene when necessary
    follow standard safety and sanitation procedures

  5. Perform tasks of bakery clerk
    Assessment Strategies
    Skill demonstration - in lab or college bakery retail space
    Criteria
    follow instructions from front end manager
    bakery products are packaged and displayed attractively in service cases
    specials/promotions are packaged effectively
    follow standard safety and sanitation procedures
    sell products to the general public
