Course Information
Description
Students are introduced to a variety of pastry doughs and fillings, and the make-up of them. Students create flakey pie crusts, tender tarts, crisp p te choux, and classic puff pastry. These base oughs are then used to make pastries such as fruit pies, tarts, cream puffs, apple turnovers and palmiers. Safe use of bakery equipment and proper sanitation procedures are emphasized.
