Course Information
Description
The lab is used as a simulated bakery in this course with products being merchandised through the bakery store. Students are responsible for service case presentation as well as effective merchandising displays and customer service.

  1. Display bakery products in service cases in an eye-pleasing manner for effective sales

    Criteria
    bakery products are arranged together by type. i.e. all cookies placed together
    bakery products are arranged with slower selling items displayed more prominently for increased sales
    bakery products are arranged alternately by light and dark colors
    follow food sanitation procedures

  2. Decorate bakery store according to seasonal themes

    Skill demonstration
    Criteria
    decorations and/or props align to the specific season, holiday or event
    decorations and/or props are appropriate for a bakery store

  3. Create bakery ads for variety of media
    Assessment Strategies
    Written and/or digital product (ads)
    Criteria
    ads include all information pertinent to the sale, as specified by the instructor
    ads create excitement about products
    complete the number of ads as specified by the instructor

  4. Perform tasks of bakery front end manager
    Assessment Strategies
    Skill demonstration - display of bakery specials/promotions
    Criteria
    coordinate with bakery manager about specials/promotions
    package and/or display bakery products attractively in service cases
    supervise front end clerks and assist or intervene when necessary
    follow standard safety and sanitation procedures
