Course Information
Description
Students work on writing menus and gain knowledge of the work behind menu writing. Students will write a menu with standardized recipes, recipe cost cards, inventory and prep list. Students will understand the importance of menu writing components such as nutrition, menu content, layout and printing. Students will see how a menu is a marketing tool and connect the types of menus and how they differ. Students will understand the importance of the menu and how it is a management tool.
